Prepare the Mayo Mix – In a small bowl, combine mayonnaise, dijon mustard, parsley, garlic, lemon zest, paprika, salt, and pepper. Mix well.
Prepare the Panko Mix – In another bowl, mix panko breadcrumbs with olive oil or melted butter to coat evenly.
Coat the Fish – Place fillets on a plate. Spread a generous layer of the mayo mix on both sides of each fillet. Press the panko mixture onto the top only.
Prepare Air Fryer Basket – Line with baking paper to help retain moisture and prevent sticking.
Air Fry – Place the fillets panko-side up in the air fryer. Cook for 12 minutes at 180°C, until golden brown and crispy.
Serve – Enjoy immediately with a squeeze of fresh lemon!
