Fogdog’s Tasty Tempura Batter was developed with one clear goal in mind: to create a gluten-free batter that tastes every bit as good as traditional tempura. After plenty of testing, both in the kitchen and out at sea, the result is a light and crispy coating that delivers on flavour and texture without a trace of gluten.

This versatile tempura mix is perfect for vegetables, fish, prawns, calamari or anything else you fancy giving a delicate crunch. Once you’ve tried it, it’s hard to go back to anything else.

Ingredients: Maize starch, rice flour, thickener (464), raising agents (450, 500), salt, mineral salt (508).

  • Use the freshest ingredients possible for the best flavour and texture.
  • Pat your ingredients completely dry before dipping.
  • Always use ice-cold water and avoid overmixing the batter.
  • If the result is too dense, add a touch more water to thin it.
  • Skim off any leftover crumbs from the oil between batches to keep the batter clean and crisp.
  1. Fill a deep pan or wok with enough oil (around 1 litre) to allow ingredients to float freely. Heat until very hot(180°C)
  2. Chill a jug of water with a few ice cubes. Let it sit for a few minutes.
  3. In a mixing bowl, combine 1 cup of Fogdog Tasty Tempura Batter with ¾ cup of the iced water. The batter should be thin and pour easily from a whisk.
  4. Dip your prepared ingredients into the batter, then gently lower into the hot oil(Do not overcrowd the pan).
  5. Cook for around 1 minute, or until the coating is pale golden.
  6. Remove and allow the oil to drain on a wire rack raher than a kitchen towel – for the best crunch!
