Preheat oven to 180 fan and line a baking tray.
Prepare your ranch style dip and set aside.
Place a good amount of the Kentucky coating mix on a plate. Add your chicken thighs one by one making sure each thigh is well coated in the seasoning. Set aside.
On a separate plate add good amount of your gluten free breadcrumbs then add your eggs to a bowl with some salt and pepper and whisk.
Dip the seasoned chicken thighs in the egg first then the breadcrumbs making sure they are well coated. Continue this process till all are done.
Add some oil to a pan on medium heat. Cook your chicken till golden then place on the lined baking tray.
Place in the oven to finish cooking for a further 7-10 mins
Serve with the dip and a side of coleslaw. Enjoy!
